Recipe from Georgene Trewatha of Campbell, Mo.

2 cups great northern white beans (drained slightly) canned or home cooked
2 tbsp chopped onion
salt and pepper to taste
1/4 cup all purpose flour ( more if needed)
1 tbsp plain yellow corn meal
bacon grease or oil for frying
1. Mash beans slightly, add all ingredients and mix well.
2. Make into patties or drop by spoonful into hot grease, flatten slightly. Fry until golden, the, turn and continue browning other side.
3. Recipe can be double or tripled. These are so good to eat with a meal or make larger patties and eat as a sandwich with mayo, lettuce, sliced onion.
Servings: 8 small or 4 large sandwich size
